\nIch bin Bartender geworden, weil…<\/strong>
\n(Gab es ein Initialerlebnis)<\/strong>
\n…ich es mag, auf die unterschiedlichsten Menschen einzugehen, mit ihnen zu kommunizieren und kreativ zu arbeiten. Gleichzeitig bietet die Branche auch als Unternehmer spannende Herausforderungen und es gibt viele M\u00f6glichkeiten, um Neues zu schaffen. Ebenso mag ich extreme und daher f\u00fchle ich mich in meiner Rolle sehr wohl.<\/p>\n

Wenn ich das nicht geworden w\u00e4re, w\u00e4re ich ….<\/strong>
\n…vermutlich Handwerker, vielleicht Schreiner. Denn letztendlich ist die Arbeit an der Bar ja auch ein Handwerk. Eigentlich war ich aber kurz davor, Profifu\u00dfballer zu werden. Leider stand eine Verletzung dieser Karriere im Weg und div. Andere Hobbys als \u201ejunger\u201c Mann.<\/p>\n

Mein Stil l\u00e4sst sich am besten so beschreiben:<\/strong>
\nNur Qualit\u00e4t und Inhalt z\u00e4hlen. Bei all meinen Projekten muss ich das Thema zun\u00e4chst komplett durchdrungen haben.
\nDer Rest kommt dann mit der n\u00f6tigen L\u00e4ssigkeit im Anschluss.<\/p>\n

Wer\/was hat mich gepr\u00e4gt?<\/strong>
\n(Viel gelernt habe ich bei…)<\/strong>
\nThea Nothnagel hat mein Verst\u00e4ndnis f\u00fcr die K\u00fcche sehr gepr\u00e4gt. Urspr\u00fcnglich bin ich ja Restaurantfachmann. Sp\u00e4ter waren es Pers\u00f6nlichkeiten wie Sven Koch. Gepr\u00e4gt hat mich bei diesen Personen das hohe Ma\u00df an Commitment, Selbstdisziplin und die Treue zu Qualit\u00e4t und Gast.<\/p>\n

Das spornt mich an:<\/strong>
\nRund um die Welt werden Drinks in unseren Gl\u00e4sern, mit Eis aus unserer Eisblockmaschine oder mit unseren Trinkhalmen serviert. Allein das ist schon ein tolles Gef\u00fchl. Vor allem, wenn ich irgendwo einen Drink bestelle und nicht damit rechne. Ich m\u00f6chte die Barszene auch in Zukunft mit neuen Ideen weiterentwickeln. Es gibt noch so viele M\u00f6glichkeiten!<\/p>\n

Mein gr\u00f6\u00dfter Fehler war…<\/strong>
\n…dass ich zu viel zu schnell umsetzen wollte. Ich musste irgendwann einsehen, dass der Markt f\u00fcr einige Ideen einfach noch nicht da war. Heute gebe ich meinen Projekten, die Zeit, die sie brauchen, manchmal. \ud83d\ude0a<\/p>\n

Stolz bin ich auf:<\/strong>
\n…meine ersten eigenen Spirituosen. Nach 15 Jahren hinter der Bar und als Berater f\u00fcr die Getr\u00e4nkeindustrie habe ich mir mit Root to Fruit einen Traum erf\u00fcllt. Als die ersten Flaschen endlich abgef\u00fcllt waren, war das ein toller Moment. Es ist anderes f\u00fcr viele andere Spirituosen zumachen und dann f\u00fcr einen selbst.<\/p>\n

Das will ich erreichen:<\/strong>
\nMit Root to Fruit m\u00f6chte ich eine neue Aperitifkultur pr\u00e4gen. Das Thema Aperitif hat ein unglaubliches Potenzial, um neue Menschen an hochwertige Getr\u00e4nke heranzuf\u00fchren und ist geschmacklich weitaus zug\u00e4nglicher als das bei vielen hochprozentigeren Spirituosen der Fall ist. Was fr\u00fcher der Mojito war, ist heute der Spritz. Beide sind massentaugliche Getr\u00e4nke, aber k\u00f6nnen mit guten Zutaten hervorragende Drinks sein. Dieses Verst\u00e4ndnis m\u00f6chte ich wecken und auf mehr Qualit\u00e4t im Glas Ansto\u00dfen.<\/p>\n

K\u00f6ln ist Fine Food, weil…<\/strong>
\n…die Stadt viel mehr zu bieten hat, als einige denken. Die Auswahl an gro\u00dfartigen Restaurants und Bars ist unglaublich vielf\u00e4ltig und bunt. Allein f\u00fcr die Gastronomie ist K\u00f6ln schon eine Reise wert!<\/p>\n

Nachhaltigkeit in meiner Bar finde ich…<\/strong>
\n…extrem wichtig. Wir haben in den letzten Jahren schon zahlreiche Prozesse optimiert, um Lebensmittelverschwendung zu reduzieren und Ressourcen zu sparen. Mittlerweile produzieren wir im Vergleich zu \u00e4hnlichen Bars pro Woche etwa 500 kg weniger M\u00fcll. Auch in vielen anderen Betrieben habe ich dabei geholfen, die Abl\u00e4ufe nachhaltiger zu gestalten.<\/p>\n

Ich entspanne vom Job durch\/mit…<\/strong>
\n…Sport, Kochen oder Lesen. Und manchmal geht zum Entspannen tats\u00e4chlich nichts \u00fcber den Besuch in einer guten Bar und den Rausch genie\u00dfen.<\/p>\n

Zuhause koche\/trinke ich am liebsten…<\/strong>
\nIch nehme mir einmal in der Woche Zeit, um f\u00fcr die n\u00e4chsten Tage vorzukochen. Dabei wird das verarbeitet, was die Saison gerade hergibt, vom Eintopf bis zum Salat. Neben Wein wartet im K\u00fchlschrank h\u00e4ufig auch eine Auswahl von Aperitifs, sodass ich f\u00fcr G\u00e4ste immer etwas vorr\u00e4tig habe.
