\nS\u00f6nke H\u00f6ltgen w\u00e4re fast Steuerberater geworden. Wie gut, dass der geborene Sylter als Jugendlicher die Sommerferien nutzte, um sich doch f\u00fcr eine Lehre im Restaurant J\u00f6rg M\u00fcller zu entscheiden.
\nOb es der Michelinstern oder die 18 Punkte Gault Millau waren, bleibt offen. Gute Entscheidung, auch wenn die Lehrzeit bei J\u00f6rg M\u00fcller anspruchsvoll war.<\/p>\n

Nach erfolgreich absolvierten Lehrjahren zog es S\u00f6nke H\u00f6ltgen auf das Festland.
\n\u00dcber L\u00fcbeck ging es in die Wirtschaft zum Wiesengrund.
\nViel Freiraum und kreative Entfaltungsm\u00f6glichkeiten zahlten sich f\u00fcr die kleine Brigarde von Hans-Peter Hussong aus. \u201eTrendsetter des Jahres\u201c, \u201eKoch des Jahres\u201c und Michelinsterne machten das Restaurant zu einer Institution in der Schweiz.<\/p>\n

Trotz der in der Schweiz Sylt-\u00e4hnlichen Lebensqualit\u00e4t, wurde S\u00f6nke H\u00f6ltgen im Rheinland heimisch.
\nEr kochte mit Dieter M\u00fcller im Schloss Lerbach, im Bitzerhof und im Erftst\u00e4dter Husarenquartier.
\nNach einigen Jahren in D\u00fcsseldorf ist er schon seit 2013 Executive Chef f\u00fcr die Kulinarik im K\u00f6lnSKY. In luftiger H\u00f6he lebt er dort seine Leidenschaft f\u00fcr Spitzengastronomie aus.<\/p>\n

Sein Vorbild ist noch immer sein einstiger Lehrmeister J\u00f6rg M\u00fcller. Auf solider Basis hat er seinen eigenen Stil entwickelt.
\nAuf den Tellern von S\u00f6nke ist die Haute Cuisine, eine weltoffene Neugierde und Lust an der Perfektion zu erkennen.
\nMit dieser Energie setzt er schon seit 10 Jahren nachhaltige Aspekte um. Mit Regionalem & Saisonalem wei\u00df er zu begeistern. Seine Begeisterung, z.B. \u00fcber einen fangfischen Fisch, \u00fcbertr\u00e4gt sich unmittelbar.<\/p>\n

Mit gutem Essen \u201eeinen Abend sch\u00f6ner machen\u201c und damit auch \u201edas Leben besser machen\u201c spornt ihn beruflich wie privat an. S\u00f6nke H\u00f6ltgen liebt seinen Beruf, liest, schmeckt, probiert und lebt diese Begeisterung immer wieder neu aus. Auch f\u00fcr die Fine Food Days Cologne. Wenn S\u00f6nke im K\u00f6lnSKY \u00fcber die Stadt schaut, sieht er die Domspitzen \u2013 und einen kulinarischen Hotspot.<\/p>\n

Luxus ist f\u00fcr ihn: Mit seiner Frau Nina essen gehen. Alternativ: Gemeinsam mit seiner Familie kochen. Alle Familienmitglieder kochen exzellent, S\u00f6nke wurde gerade erst von den japanischen Dumplings seines Sohnes beeindruckt.
\nEinen Tag in der Woche \u00fcbt sich S\u00f6nke H\u00f6ltgen nach M\u00f6glichkeit im sog. digital detox. Handy aus, Mischling Lilli an die Leine und dann raus an die frische Luft. Wie gut, dass S\u00f6nke kein Steuerberater geworden ist.
