Mijn gasten vertellen me ook dat ik een vrouwelijke signatuur heb.<\/p><p><strong>Wie\/wat heeft mij gevormd?<br \/><\/strong>De verschillende landelijke keukens en de vele internationale collega's met wie ik mocht samenwerken. En ook mijn leermeester \u2013 wat men als eerste leert, blijft.<\/p><p><strong>Dat motiveert me:<br \/><\/strong>Ziel en druk. Zonder deadlines vind ik het moeilijk om te presteren.<\/p><p><strong>Mijn grootste fout was om...<br \/><\/strong>\u2026in mijn professionele beginjaren niet de handvaardigheden heb geleerd in twee- of driesterrenkeukens. Ik werd al heel vroeg chef-kok. Maar met mijn wereldreis ben ik mijn eigen weg gegaan en heb ik die fout rechtgezet.<\/p><p><strong>Trots ben ik op:<br \/><\/strong>Wat we vorig jaar hebben bereikt: we hebben met een groot team twee restaurants opgezet en nieuwe vaste klanten kunnen werven. Daarnaast is het me gelukt om met Kenzolie mijn eigen bedrijf op te zetten, dat onder meer biologische Tunesische olijfolie en premium specerijen aanbiedt.<\/p><p><strong>Dat wil ik bereiken:<\/strong><br \/>Over negen jaar niet meer elke dag hoeven te werken.<\/p><p><strong>Keulen is Fine Food, omdat\u2026<\/strong><br \/>\u2026er zoveel verschillende concepten en landkeukens bestaan: van de foodtruck tot het tweesterrenrestaurant, en van het Argentijnse steakhouse tot de wijnbar.<\/p><p><strong>Duurzaamheid in de keuken en in de bedrijfsvoering vind ik\u2026<br \/><\/strong>...erg belangrijk. We proberen de producten zo duurzaam mogelijk te gebruiken door de gemeenschappelijke keuken van de twee restaurants. Bovendien betrekken we veel producten van lokale boeren.<\/p><p><strong>Hoe ontspant u zich?<br \/><\/strong>Ik ontspan van mijn werk door de zonnestralen. Ik heb warmte en zon nodig.<\/p><p><strong>Wat kook jij thuis?<\/strong><br \/>Ik hou ervan om te barbecue\u00ebn.
