I came into contact with good food in my family from a young age. This sparked my interest in food, in culinary arts, and I was able to develop an understanding of quality and taste at a very early stage.
If I hadn't become a chef, I would have….
done something with motorsport. My time at Audi really triggered something in me. I will remember the race days in Le Mans and all the experiences for the rest of my life.
My style can best be described as:
Simple, with a great deal of focus on the intrinsic flavour and holistic processing.
Who or what has shaped me?
First and foremost, as already stated: my family. They instilled in me the joy of „being a host“. And then, of course, my apprenticeship at Hotel Victoria in Bad Mergentheim with head chef Mr. Retzbach. The first Michelin restaurant in Germany according to Slow Food criteria. That leaves a mark. The rapid period at Audi in catering and the associated travels around the world, and finally, the experiences I was able to gain with Ludwig Maurer and Heiko Antoniewicz over the last few years.
That spurs me on.
Delicious to cook. While doing so, throwing away as little as possible and giving everyone involved a good time.
My biggest mistake was...
Not having taken the step towards Cologne sooner. But I'm still young, I fear a few mistakes still await me. As is well known, one also often learns from them.
I am proud of:
Having managed the start in Cologne so well with my partner and our one-year-old daughter. Thanks to our friends and also my team, who handled it very well!
