Was there an initial experience
...I enjoy engaging with a wide variety of people, communicating with them, and working creatively. At the same time, the industry also offers exciting challenges as an entrepreneur and there are many opportunities to create new things. I also like extremes, and therefore I feel very comfortable in my role.
If I hadn't become this, I would have been...
…presumably craftsmen, perhaps carpenters. Because ultimately, working at a bar is also a craft. Actually, though, I was on the verge of becoming a professional footballer. Unfortunately, an injury stood in the way of that career, along with various other hobbies as a „young“ man.

Thea Nothnagel has greatly influenced my understanding of cuisine. Originally, I'm a trained restaurant specialist. Later, it was personalities like Sven Koch. What influenced me with these individuals was their high level of commitment, self-discipline, and loyalty to quality and the guest.
That spurs me on.
Across the globe, drinks are served in our glasses, with ice from our ice machine, or with our straws. That alone is a fantastic feeling. Especially when I order a drink somewhere and don't expect it. I want to continue developing the bar scene with new ideas. There are still so many possibilities!
My biggest mistake was...
...that I wanted to implement too much, too quickly. At some point, I had to realise that the market simply wasn't there for some ideas yet. Today, I sometimes give my projects the time they need. 😊
I am proud of:
...my first own spirits. After 15 years behind the bar and as a consultant for the drinks industry, I've fulfilled a dream with Root to Fruit. When the first bottles were finally filled, that was a great moment. It's different making it for many other spirits and then for yourself.
That's what I want to achieve:
With Root to Fruit, I want to shape a new aperitif culture. The theme of aperitifs has incredible potential to introduce new people to high-quality drinks and is far more accessible in terms of taste than many higher-proof spirits. What the Mojito used to be, the Spritz is today. Both are mass-market drinks, but can be excellent cocktails with good ingredients. I want to awaken this understanding and toast to more quality in the glass.
Cologne is fine dining because…
…the city has much more to offer than some might think. The selection of great restaurants and bars is incredibly diverse and colourful. Cologne is worth a trip for its food and drink scene alone!
Sustainability in my bar, I find it...
…extremely important. We have already optimised numerous processes in recent years to reduce food waste and save resources. We now produce around 500 kg less waste per week compared to similar bars. I have also helped make operations more sustainable in many other businesses.
I relax from work by/with…
... sport, cooking or reading. And sometimes, to relax, there's nothing quite like visiting a good bar and enjoying a tipple.

I take time once a week to do some meal prepping for the coming days. I use whatever is in season, from stews to salads. Besides wine, there's often a selection of aperitifs in the fridge, so I always have something on hand for guests.
