When asked why he became a bartender, Stephan Hinz replies:
„Because I enjoy engaging with all sorts of different people, communicating with them, and working creatively. At the same time, the industry also offers exciting challenges as an entrepreneur and there are many opportunities to create new things. I also like extremes, and therefore I feel very comfortable in my role.“ Had he not become a bartender, he might have become a carpenter. A craftsman in any case, because working behind the bar is also a craft. Actually, however, he was on the verge of becoming a professional footballer. An injury and other hobbies of a young man got in the way. So Stephan Hinz became a restaurant manager. His understanding of the kitchen has greatly shaped Thea Nothnagel. Sven Koch also had a formative influence with his high level of commitment, self-discipline, and loyalty to quality and the guest.
No wonder that for Stephan Hinz, only quality and content matter. For his projects, he first has to fully immerse himself in the topic and then: A necessary nonchalance sets in. Stephan Hinz used to sometimes find himself too hasty, but today he makes an effort to give his projects the time they need. This pays off, because drinks are now served all over the world in his glasses, with ice from an ice block machine, or with his straws. A fantastic feeling, especially when he orders a drink somewhere and doesn't expect it. „I want to continue to develop the bar scene with new ideas in the future. There are still so many possibilities!“ Stephan Hinz finds relaxation through sports, cooking, or reading. „And sometimes, to relax, nothing beats a visit to a good bar and enjoying the intoxication.“
He is proud of his first own spirits. After 15 years behind the bar and as a consultant for the drinks industry, he has fulfilled a dream with Root to Fruit. „When the first bottles were finally bottled, that was a great moment. It's different to make spirits for many others and then for yourself.“
With Root to Fruit, he wants to shape a new aperitif culture. “The theme of aperitifs has incredible potential to introduce new people to high-quality drinks and is far more accessible in terms of taste than many higher-proof spirits. What was once the Mojito is now the Spritz. Both are mass-market drinks, but can be excellent drinks with good ingredients. I want to awaken this understanding and toast to more quality in the glass."
Sustainability is extremely important in his bar. „We've already optimised numerous processes in recent years to reduce food waste and save resources. We now produce around 500 kg less waste per week compared to similar bars. I've also helped to make processes more sustainable in many other businesses.“
He considers Cologne a city worth visiting for its gastronomy alone. The selection of great restaurants and bars is incredibly diverse and varied.
He himself sets aside time once a week to cook for the coming days. He uses what's in season, from stews to salads. „Besides wine, there's often a selection of aperitifs in the fridge, so I always have something ready for guests.“
