Op de vraag waarom hij barman is geworden, antwoordt Stephan Hinz:
„Omdat ik het leuk vind om met allerlei verschillende mensen om te gaan, met hen te communiceren en creatief te werken. Tegelijkertijd biedt de branche ook spannende uitdagingen als ondernemer en zijn er veel mogelijkheden om nieuwe dingen te creëren. Ik houd ook van extremen en daarom voel ik me erg op mijn plek in mijn rol.“ Als hij geen barman was geworden, was hij misschien timmerman geworden. In ieder geval een vakman, want werken achter de bar is ook een ambacht. Eigenlijk stond hij echter op het punt profvoetballer te worden. Een blessure en andere hobby's van een jonge man kwamen ertussen. Dus werd Stephan Hinz restauratiemedewerker. Zijn begrip van de keuken heeft Thea Nothnagel sterk gevormd. Sven Koch was eveneens vormend met zijn hoge mate van betrokkenheid, zelfdiscipline en trouw aan kwaliteit en de gast.
Het is geen wonder dat Stephan Hinz alleen waarde hecht aan kwaliteit en inhoud. Bij zijn projecten moet hij zich eerst volledig in het onderwerp verdiepen en dan: een noodzakelijke nonchalance instellen. Vroeger vond Stephan Hinz zichzelf soms te snel, tegenwoordig probeert hij zijn projecten de nodige tijd te geven. Dat loont de moeite, want inmiddels worden over de hele wereld drankjes geserveerd in zijn glazen, met ijs uit een ijsblokmachine of met zijn rietjes. Een geweldig gevoel, vooral als hij ergens een drankje bestelt en het niet verwacht. „Ik wil de bars scène ook in de toekomst met nieuwe ideeën blijven ontwikkelen. Er zijn nog zoveel mogelijkheden!“ Ontspanning vindt Stephan Hinz in sport, koken of lezen. „En soms gaat er om te ontspannen inderdaad niets boven een bezoek aan een goede bar en genieten van de roes.“
Trots is hij op zijn eerste eigen sterke drank. Na 15 jaar achter de bar en als adviseur voor de drankenindustrie, heeft hij met Root to Fruit een droom waargemaakt. „Toen de eerste flessen eindelijk gevuld waren, was dat een geweldig moment. Het is heel anders om voor anderen sterke drank te maken en dan voor jezelf.“
Met Root to Fruit wil hij een nieuwe aperitiefcultuur vormgeven. “Het thema aperitief heeft een ongelooflijk potentieel om nieuwe mensen kennis te laten maken met hoogwaardige dranken en is qua smaak veel toegankelijker dan veel sterke dranken. Wat vroeger de Mojito was, is nu de Spritz. Beide zijn massale, maar met goede ingrediënten kunnen het uitstekende drankjes zijn. Dit begrip wil ik wekken en aanzetten tot meer kwaliteit in het glas.“
Duurzaamheid is in zijn bar extreem belangrijk. „We hebben de afgelopen jaren al tal van processen geoptimaliseerd om voedselverspilling te verminderen en grondstoffen te besparen. Inmiddels produceren we in vergelijking met soortgelijke bars wekelijks ongeveer 500 kg minder afval. Ook in veel andere bedrijven heb ik daarbij geholpen om de processen duurzamer te maken.“
Hij ziet Keulen als een stad die alleen al vanwege de gastronomie een reis waard is. De keuze aan geweldige restaurants en bars is ongelooflijk divers en kleurrijk.
Hij neemt zelf een keer per week de tijd om voor de komende dagen voor te koken. Daarbij wordt verwerkt wat het seizoen net oplevert, van stoofpot tot salade. „Naast wijn staat er in de koelkast vaak ook een selectie aperitieven, zodat ik voor gasten altijd iets op voorraad heb.“
