Ich bin Koch geworden, weil meine Großeltern einen Bauernhof hatten und ich von klein auf mit Einkochen, Kochen, Backen, Schlachten usw. zu tun hatte. Ein Praktikum in der sehr guten Restaurantküche meines Onkels hat mich für diesen Beruf inspiriert.
Wenn ich nicht Koch geworden wäre, wäre ich Winzer oder Affineur.
Mein Stil lässt sich am besten so beschreiben: Mittlerweile eher wieder Klassisch
Mein Vater sagte immer Wenn du auf der Arbeit bist, weiß ich wenigstens wo du bist….“. Er hat mich geprägt und mir beigebracht, dass Arbeit nicht schadet und Spaß macht (auch wenn es mal mehr als 8 Std. sind).
Entspannung finde ich bei Konzerten, auf den Runden mit unserem Hund oder beim Darts mit meiner Familie. Privat lieben wir alles aus dem Smoker.
Zufriedene Gäste spornen mich an und stolz schaue ich auf 35 Jahre in meinem Beruf. Mein Stil ist mittlerweile eher wieder klassisch.
Mein Ziel ist, Nachwuchs für diesen schönen Beruf zu begeistern. Das passt zu Köln und Umgebung, wo so viele gute Restaurants mit vielen netten Kollegen für Fine Food stehen.
